Maybe Dumbledore *can* be sure that Snape will not go over to the 
evil side, because when Snape decided to turn against Vodemort, and 
wanted to be a good guy, Dumbledore wanted to make sure that he was 
telling the truth so used the Veritaserum on him.

This way, he knows he isn't lying and he can trust him.
