I think JKR is in the position now where she can't be pushed around.
Lots of publishers will be happy to take anything she writes, and 
Bloomsbury knows it very well.

Back to the subject line - I don't think finished series will leave 
us without subjects for discussions and speculations. Take Sherlock 
Holmes as an example: it's been finished for a while now, but the 
Great Game is alive and well and there is always some new idea to 
discuss every year.
