It's possible that there is never a reserve Seeker, but we know from Book 1
that there can be reserves for other players.

Also in the match where Snape was going to referee---Ron and Hermione told
Harry to pretend to break his leg, or really break, it to get out of the
match.  Harry told them that there is no reserve seeker - to me this implies
that their are reserves for other positions.
