I don't know the official definition of the word "canon"...but basically it means, in this case, anything written by the author. So if the books say that Harry has green eyes, but in the movie they are blue, we would choose the book's description as "fact" because it is "canon." Does that make sense?
And re: the title. In America, it is HP and the Sorcerer's Stone, but the English/British title is HP and the Philosopher's Stone. It's like that because of the differences of the English language in the US as opposed to English in England.
