What if Quirrel tried to get at Flamel and was somehow unsuccessful?  
Or maybe he couldn't get any elixir but managed to discover the 
whereabouts of the stone when he learned it was not with Flamel.  
Flamel then warns Dumbledore that someone is after the stone, though 
he doesn't know it's Hogwart's DADA teacher.  Dumbledore then has 
Hagrid take the stone from it's vault at Gringott's to Hogwarts where 
Dumbledore is able to give it proper protection.  
I don't think it's mentioned anywhere in PS/SS why they decided to 
move the stone to Hogwarts at that particular time.  There must have 
been some reason to believe that it was in danger at the bank.  
Perhaps an attempt to steal the elixir alerted them to the danger.
