I think the stone had been at Gringott's for a long time. The goblin 
said they check the vault for intruders every 10 years or so. My idea 
was that Voldemort/Quirrell should have tried to steal some elixir 
from flamel, just to sort of "power up" a little, before attempting 
to steal the stone itself.
