Sounds pretty accurate. The things that evanesco is cast upon "vanish 
way" and "disappear like vapor."

Maybe the thing that is vanishing turns into gases like oxygen, 
hydrogen, etc.  That way they would just turn into thin air.  I don't 
know that much about chemistry, but I do know that there are 
processes that will reduce carbon-based things into water, gas, and 
some solids.  Since water is 2 parts hydrogen, one part oxygen, maybe 
evanesco reduces things down so far that they are just thin air -- 
with maybe just a sprinkling of inert solids on the floor to be swept 
up by the house elves.
