It isn't garlic that smells, it is Lord Moldywart stuck to the back 
of Quirrel's head.  And just because Snape is potions professor does 
not mean he has not been schooled in the finer arts of incantations, 
charms, hexes, jinxes, or in the defence against the dark arts 
(which he wants to teach very badly).
