Possibly because Ron has pretty much been overshadowed by either his 
friends or brothers for most of his life. If Hermione becomes 
Minister of Magic it won't do any wonders for his self-esteem.

The question is can Ron have a wife that continues to overshadow him 
and who would have more concern for the welfare of the wizard world 
than for her husband?
