Even if Lupin could teach Harry occlumency, how would they explain 
his presence at Hogwarts?  He was forced to leave because of being a 
werewolf.  Snape "accidentally let slip that I am a werewolf this 
morning at breakfast. <snip> This time tomorrow, the owls will start 
arriving from parents....They will not want a werewolf teaching 
their children, Harry." (PoA, p423, US)  Trying to keep his presence 
a secret would be chancy, there are always snoopy students around, 
and those same parents would go crazy if a werewolf were "hanging 
around" the school.
