Snape doesn't mutter anything under his breath in POA after the mud-
slinging Hogsmeade scene, in GOF when he accuses Harry of stealing 
the boomslang skin, and in any of the other instances that are

But other than that, I agree with you that no one has called Snape a 
good Legilimens. Besides, it's probably not too hard to read the 
truth in a kid's eyes, especially when he doesn't know that you're 
doing just that.
