Now me:

Quite true...I doubt that Dumbledore withheld any of the prophecy from
him. The pauses seem to just be the way Trelawney speaks (or is spoken
through) when making the prophecy, and happens again when she makes
the prophecy about Wormtail and LV to Harry in PoA.
