I was in the middle of writing an e-mail considering this when it occurred
to me - the Longbottoms were tortured *after* the Potters died. So if they
had gone into hiding with the Fidelius Charm they would presumably have come
out of hiding after the Potters died, which is why the DEs were able to find
them and torture them.
