What was the question on why Sirius Black changed his mind on being the
secret keeper? I have to assume it's "Why did he change his mind?" Sirius
says that he convinced James and Lily to use Peter because he assumed that
Voldemort would never think that they would use someone so lowly as Peter,
and would instead come after himself [Sirius, the obvious choice for Secret
Keeper]. I think the obvious question is, why didn't they use Dumbledore?
To which of course, the answer is "Then there wouldn't be a basis for the
series."
I think most people assume all of the Marauders were in Gryffindor, though
as far as I know, there's no canon that states specifically which House(s)
the Marauders were in. Someone please correct me if I'm wrong.

If a location is unplottable, it cannot be plotted on a map. If Dumbledore
himself looked at a map of The British Isles (or the world, for that
matter), he couldn't tell you where Hogwarts actually was (if Hogwarts is
actually unplottable; Maybe it's just the other schools that are
unplottable, my mind is blank at the moment; anyway, you get the idea).
However, he and probably all Wizards, can still find it.
With a Fidelius Charm, the people being hidden simply cannot be found. It's
like they don't exist to anyone who wants to find them, aside from their
secret keeper. I could almost see it as being like this (pure speculation):
Pretend the Fidelius Charm still works. Voldemort shows up in Godric's
Hollow to look for the Potters. He proceeds to search the houses for the
Potters. He gets to the house the Potters are hiding in. Suddenly, he
thinks "I've already searched this house; they aren't here." Even if he
somehow KNEW the Potters were in Godric's Hollow (even THAT seems impossible
with a Fidelius charm), he could never find them, so strong the is
suggestion that he had already looked in their house. Now, if you apply
this to EVERYONE, not just Voldemort, you have the idea of the Fidelius
Charm.
