Me:
Madam Pomfrey knew about the effects of chocolate and was relieved
that Hogwarts finally had a DADA teacher who knew, too. Madam Pomfrey
was also the one leading Lupin to the Whomping Willow when he was a
student. As the werewolf transformation is very painful, Lupin
probably spent a lot of time with her, the school matron/nurse, once a
month, every month, for seven years. He might have picked up a few
pointers from her in that time.
