I think it's just a historical thing. A 1000 years ago witchcraft probably consisted of potion-making (and maybe some other things), or it's at least a common stereotype. 
Wizardry probably implied something else back then. 

As time went by, witches and wizards all started to do all kinds of magic, but the name of the school didn't change - tradition.

That's all IMO of course.
