I also am a huge H/G shipper, but I see it a little differently.
Harry is the hero, and he needs a heroic romance, something Cho
could never have provided. For me, the idea of Harry dating is just
absurd all together. Sure he wants to be a normal kid, but he isn't,
and never can be.

Ginny and Harry can have an Epic romance. Harry has saved Ginny
once, perhaps she will save him, or they will find themselves
together in mortal peril, and realize their devotion to one another.
Also, Ginny is the only girl in the series good enough for Harry.
She is a naturally talented Seeker, she is smart, capable and
fearless, with an enormous devotion to her friends and family.

Shd also may the character that understands Harry the best. OotP was
all about isolating Harry. He loses Sirius, finds out his father was
a jerk, Dumbledore is falible, and Ron and Hermione are made
prefects together. Harry is left nearly alone, but we see at the
beginning that Ginny understands the way his relationship with LV
has affected him. It seems like he and Ginny are being set up to
spend more time together in the sixth book. And then there's always
Ron's furtive glance at the end of OotP, which to me is almost a
guarantee that they will end up together. Ron and Hermione may date,
but Harry and Ginny are set up for a truly heroic Romance.

Sirius Sam
(who realizes that he has read altogether too much into tiny little
hints for H/G, but is confident it will happen)
