I don't see anything in PoA to point to his Patronus during the Quidditch 
match as shaky, can you point out what you're referring to?  From the following 3 
quotes, it appeared to be a complete sucess:

ch 13
"Something silver-white, something enormous, erupted from the end of his 
wand.  He knew it had shot directly at the dementors but didn't pause to watch..."

ch 13
"'That was quite some Patronus,' said a voice in Harry's ear.  Harry turned 
to see Professor Lupin, who looked both shaken and pleased."
 - this one especially, because Lupin was clearly shaken because the Patronus 
was a stag, and he made the connection to James' animagus form.

ch 22
DD - "How else could you produce that particular Patronus? Prongs rode again 
last night."
....
"And then I remembered the most unusual form your Patronus took, when it 
charged Mr. Malfoy down at your Quidditch match..."
