I don't know for sure that they did not go into government service - I've
wondered about them being Aurors, but I think it would have been mentioned
by now, as we know that the Longbottoms were aurors.

Clearly Black has money - he bought the Firebolt and has family assets -
like the house.  Lupin is poor because of the issue with being a werewolf
and not being able to get a job.  Pettigrew was a rat for how many years -
how could he have made any money?

Since we haven't been told outright, I'm assuming that it is part of the
larger body of information important to the story that JKR will only let
snippets out at a time.
