Now me:

I recall reading that Dumbledore and Sybill met in a room UPSTAIRS at 
the Hog's Head and that's where the prophecy was given.  My immediate 
thought was that they met in HER room...but they couldn't have been 
overheard there, could they?  Or was there a bar area upstairs too?  
I don't recall mention of it when Harry, Hermione, Luna and Rita met 
there...??

or even more sinister, perhaps it was RITA who was a *bug* on the 
wall in that room...............
