I totally agree - I didn't recognize the Ron/Hermy ship until the 
movies came out and it totally disturbed me because I thought it was 
just Hollywood being Hollywood (ok, Britain's Hollywood) as usual.  
But after re-reading the series a gazillion times, I see that the 
references to their budding relationship are blasting out from the 
pages and I can't believe I didn't see that the first time.  I am 
confident they will become a couple...  I'm thinking book 6?

As for Harry/Cho, I also can't imagine that their failed date will be 
the end of everything.  Towards the end of OOTP she seemed to be 
getting friendly with him again, such as when she was apoligizing on 
behalf of Marietta (I think her name was...?).  While this may not be 
much evidence of anything, I have a feeling that Jo is going to be 
playing with our heartstings again very soon.
