A thought just occured to me while reading your post.
What if that particular memory was removed to protect a secret of the 
order?
Was it what colour Snapes undies are! :b

But more seriously perhaps a glimpse into the inner workings of 
Snapes relationship with James and Sirius is a matter for protection.

I could use that, with compunction, to address a fallibility in 
Snapes cover. Perhaps some of Snapes anger was that now Harry 
retained this information, and by which, Harry now comprimises his 
working relationship with Voldemort.

Noting, as I am, how I am most likely to be misdirecting the scene, 
there is still a probability that this memory is dangerous in 
Voldemorts hands for the OotP. Or just for Snape himself.
