As one of the number crunching fraternity, I couldn't help noticing the
reference in OoP to there being "over a hundred" desks in the Great Hall for
the OWL exams - which presumably allows us to draw the conclusion that
that's how many 5th years there are.
The other canon reference I recall is the one where there are 800 spectators
at a Quidditch match (of whom a quarter are Slytherins)
But I know that there are many theories on the Hogwarts numbers question
which touch on all sorts of aspects, including whether the numbers in each
house are equal, how the number of staff can cope with the numbers of
students, whether Hogwarts has more than one campus, all the way up to the
really big one about "what's the ratio of wizards to muggles, anyway?!"
