Well, I don't know about Snape, but I think what happened when Uncle Vernon
was grabing Harry by the throat is due to Lilly's protection. I mean, we
know he has some kind of protection in him, in his blood. Uncle Vernon was
suffocating him, i think he was very close to strangling him (not on
purpose, probably) so this mechanism of defence, which is latent in his
blood, activated producing the heat and forcing uncle Vernon to release him.
The Snape case, I think Harry subconsciously made some magic to prevent
Snape seeing his memories of Cho.
