OK, this has just given me an idea and GASP, it casts Snape in a good light,
so pop some popcorn and enjoy the show.
This is just one idea and does not in any way mean Still!Evil!Snape or
Hateful!Bastard!Snape are out.
What if Snape privately talked to Hermione about it? We know she can keep a
secret, even from Harry and Ron - the Time Turner; Lupin; Krum; Rita.
So, what if Snape approached her, apologized in his own way, told her
something vital and then swore her to secrecy. Or maybe Hermione, no
dummy and calculating in her own way, threatened to go to McGonagall if
Snape didn't tell her why D-Dore trusted him.
That would explain her trying to get Harry and Ron off Snape, but not being
more specific. That would explain why she trusts him -- she knows what D-
Dore knows.
And it would fit that Snape, the victim of the "Snivellus episode," would be
regretful over watching what happened to Hermione. Is there really much
difference between greasy hair and overlarge front teeth?
There, my bone to the Snape-lovers. :)

-- Would feel a lot better about Snape if I knew that the tooth-enlarging
incident wasn't the real Snape.
