I think this was in there to redeem the Centaurs. At some point in the
future, the Centaur will return to Dumbledore's side, and for that to
happen, JKR couldn't let the Centaurs become murderers. 

I think that fits the Centaur. They seem somewhat benevolent, and
highly developed creatures. If you are to believe them, they are more
highly developed that Humans/wizards, so I don't see them getting
caught up in a blood lust frenzy and killing ever human that wanders
into their woods. 

I think it was their intent to show Umbridge that they, the Centaurs,
were not to be triffled with. She did provoke them. If she had kept
her head, she may have been able to talk her way out of the situation,
but instead, in the typical arrogant Western Euorpean way, she incited
them. I don't think she will be doing that again any time soon.

So, back to the main point, I do think JKR could allow the Centaur,
intelligent and highly evolved creatures, to become murderers.

Just a thought.
