Because JKR's path for Sirius was to kill him off in OoP, for 
whatever reason.  And there are many ideas  - it's part of the Hero's 
journey to lose his mentors/guides and to have to stand on his 
own...it's to show that death is random and sudden and unfair...it's 
to give Harry an additional motivation to defeat Vmort...

The path for Sirius was plotted. He had to die. Just because there 
are a lot of potential ideas of how magic could have been used to 
save him by putting him somewhere else or disguising him or simply 
figuring out some other course of action he could take....well, don't 
think about that.  That's not important. What was important was that 
he had to die, and he was killed off. End of story.
