He is shown practicing it in GoF, before the third task. Hermione 
shatters it with a well-placed Jelly Legs Jinx. However, I don't 
believe we see that he can really do it until he uses it on Snape 
during occlumency. And I'd argue that was instinct as much as any 
conscious act.

Since he hasn't apparently mastered it, it stands to reason that he 
would not be confident enough to use it, especially against an AK 
spell, during the graveyard fight.
