Madame Hooch

What exactly does Madame Hooch teach? We know that she teaches the 
firsts years how to fly and that she coaches the Quidditch matches, 
but what else does she do? In CoS she is called "the Quidditch 
teacher". Does this mean that there is a Quidditch class? Or maybe 
there is a magical sports class, kind of like a P.E. class. But if 
that's the case, why is it never mentioned? Maybe it's one of those 
extra classes that's not required, but surely Harry would be in it. 
And why is Madame Hooch not called "Professor Hooch"? Even Grubbly-
Plank is called "Professor" and she's just a substitute. Any ideas?

Speaking of Gtubbly-Plank, is she just a substitute or does she is on 
the Hogwarts staff?
