I don't think Snape would be a good spy if he let
little things like that slip out whenever he was
nervous or distracted. He would need to be in complete
control of his body at all times.
Just from the blatant statement of it, I think it is
more of a sign to Harry. What the sign is, I don't
know. It could be anything from "Keep your mouth
quite, boy" to "This is your focus" to "Come hither, I
want you".
Anyhoo, I would think it meant something, and not just
a distraction.
