You know, I never got the impression that Snape threw the jar at all.  
I should go back and take another look at the scene but I thought the 
jar broke for one of two reasons:
1) Harry was so upset by what just happened that he involuntarily did 
magic, as we've seen him do before (Aunt Marge, growing his own hair 
back, sending electricity to Vernon and so on).
2)Snape was so upset by what happened that *he* involuntarily did 
magic and the jars broke due to his own emotions.
