Switching spells

Once again, I'm confused. :) I know switching spells are mentioned frequently, and that's part of the basis for the James is Lupin theory. However, I don't understand that. (what else is new?) I've always been under the impression that a switching spell was merely to switch body parts or pieces of something. Like when Hermione suggested that Harry could switch the dragon's fangs for wine gums. Now, that could be because Harry was only 14 and not that experienced with switching spells, but surely if the whole dragon could've been switched to, say, a mouse, she'd have mentioned it? Where is the canon for switching entire bodies? I'm not saying it's not there, but if anyone can pinpoint other switching spell locations I'd appreciate it, as my mind's attempting to formulate a theory of sorts.
