Honestly, I think that what the Mirror of Erised shows is desires,
/independent/ of the future. It's about the person as they are at the
time, and what they want, not what is or is not likely to happen.
Which means that if what you want most is something impossible, that
won't stop the Mirror from showing it -- but if what you want IS
possible, seeing it in the Mirror doesn't make it impossible for all
or part of it to come true.
