I think the part you've got it backwards. It was Harry's eyes who remained on 
Snape long after Snape had looked away.   And I don't think we see that 
behavior from him all the time.  He doesn't reveal to Harry what's in the DoM, and 
is brutally honest to the point where he insults him.  Yet he willing tells 
him. "Yes , that is my job" (or something. I wish I had my book back ;_;).  
Snape isn't any nicer or more respectful to Harry than before.  I think, perhaps, 
they've both changed a bit individually(possibly towards each other) and it 
reflects sometimes in their interraction together.
