Her comment didn't strike me as off at all. She's young and has
quite a mouth on her, as you might recall from the sniping she
did at Trelawney in PoA. Hermione's been picking at Lavender and
Parvati ever since PoA as well. Remember, they were Trelawney's
devoted followers at every turn, and they weren't disappointed
in the least when Hermione got a dressing-down by Trelawney and
left class. (In fact, Hermione dropping the class just confirmed
one of Trelawney's predictions.)

Her comment about Firenze wasn't spoken as derrogatory toward
the centaur, she was just trying to take the wind out of
Lavender's and Parvati's sails. Totally normal :o)
