Excellent choices! These three scenes could make a whole movie. In 
no effort to compete, some scenes that must be in the movies, IMhO 
are:

1. Aunt Marges expanding cranium.
2. Harry's "C'mon, dad where are you?" scene.
3. ....and because I would, personally, like to see a lot more of 
JKR's terrific humour come through in the movies, Hermione crawling 
out from her Dementor test blubbering "I've failed everything."
