Well, aside from the fact that perhaps only one was described...we
do have to keep something else in mind.
The mirror shows you the deepest desires of your heart. Not just
things and people you cannot have. We assume that the majority of
the people looking out at the mirror are dead since the Dursley's
are Harry's only blood relatives (as we're told time and time
again). So of course, in addition to the non-mention, you've got to
keep in mind that the Mirror is going to show Harry what he
wants..his family, alive or dead. I suspect it did not show Harry
Petunia and Dudley because he did not desire to see them. If
Dumbledore was Harry's other grandfather, I'm quite sure we would
have seen him.
...And as I typed to rebuke your idea...I realized something. The
mirror shows Harry what he WANTs. If Voldemort was Harry's
grandfather than Harry would by all means not have seen him. After
all, who would want Lord Voldemort as Grampy Voldy?
That's a bit out on a limb still. Consider other facts...surnames.
Evans, Potter, Riddle. I very much so doubt that Petunia could've
been raised by her mother with her mother's surname in a time when
it was uncommon and we would not have heard about it yet. Timelines
also throw us off...somewhat. There are still unanswered
questions...like why we've never heard of Harry's grandparents (from
Petunia, Sirius does mention the Potters briefly in book 5). We may
never hear of them either, if they're not important to the plot.
