Yes and no. Recorded memories are weird. The pensieve, and Riddle's diary
(as I recall) allow Harry to wander around in the memory, seeing things that
the rememberer could not have known (like what James was doodling, or even
what anyone else was doing as Snape concentrated on his paper). Give the
broadened "scope" of the memories we see in the pensieve, I'm willing to
accept this as what happened.
Even with Dumbledore's memories, we are not limited to what Dumbledore
looked at, or even looking through Dumbledore's eyes. I think that what we
saw of Snape's memory is what really happened. If he could alter it, he
would make it less painful for himself.
