Harry does not remember seeing his parents die. His only
memory is of a flash of "blinding" green light. The Dementor
memories bring him only sounds, not visions.
He didn't remember seeing Cedric die either. He hid his eyes.
Only when he relived the experience in his dreams (possibly
mingled with Voldemort's recollections?) could he have seen
Cedric die.
There's a pyschological truth in this, that the knowledge of
death takes time to sink in. Harry seems to accept Cedric's
death at once, but that's because we're being told the events as
he recalled them a month later. When he actually left Hogwarts,
he would still have been in denial, and the thestrals would have
been invisible.
