Hard to say I think also that Harry will continue Potion just for 
the purpose of books (otherwise his interaction with Snape will be 
greatly reduced) but as that has been say maybe Harry will need DD 
help to have potion lesson.
And auror is not the only possibility for Harry teacher has some 
possibility to happen .

I'm not sure Fudge really apologize at least to Harry and there are 
some possibility that he will not be ministry next years (what will 
happen if the next ministry is Mr Weasley ?)

I still hope for a H/H couple but I'm not sure OOTP add something to 
the discussion.

No, after all we saw Harry save Dudley and I think Harry will found 
it a nasty thing to bully his cousin.  If he began to get revenge (I 
mean something really vicious ) he will be on the voldemort path.
