I think part of the reason might be that Hermione had never
heard of Voldemort during her childhood, while Ron grew up
hearing stories about his horrible deeds.
Most of the adults seem to avoid saying V's name, too, so I
can see why Ron reacts this way.

In the Muggle world people don't usually avoid saying
infamous people's names, so she may go along with not using
it, but not really be shocked if someone does.

And maybe something happened in Ron's family that was caused
by Voldemort, and we haven't heard about it, yet.
