Actually, it's a classic JKR humorous reference to a title of a book 
that was popular in the 50's or so. The book was The Egg and I, which 
is a story about misadventures in chicken farming. Hence, the chapter 
title must be The Egg and Eye to promote the joke.

OT post script - the author of The Egg and I got TB after publishing 
her book and wrote a sequel - The Plague and I. Sorry - I've been 
laughing at that title for 30 years and had to share.
