  Oh no, they had a seeker all right, just not a very talented one.
 I'd go so far as to say they have reserves for the positions, but 
 they are just not considered important enough to mention

Sorry Errol, there is canon:

"Harry shifted guiltily in his seat. He had been unconscious in the 
hospital wing in the final match the previous year, meaning that 
Gryffindor had been a player short and had suffered their worst 
defeat in three hundred years" CoS p. 84 UK paperback edition.

I would agree that Wood should have made one of the other players 
the seeker, but it certainly seems as though they only played with 6 
players.
