Wouldn't she have had to have made this prediction long before she became a 
teacher?  I imagine there's some prediction you have to make to prove you're a 
Seer or else everyone would just be walking around, picking up chicks by 
saying "Yeah, I'm a Seer - and I See you and me together!"  Maybe her first 
prediction is what got her her job, and McGonagall's er...frustration with Trewlaney 
is that she hasn't made another one since (unil PoA).
