I have a suggestion as to why DD has not allowed Snape to teach DADA.  Perhaps it is because he cannot be replaced as Potions Master and for some reason, as yet to be revealed, it is vital for the survival of DD's "army" to have mastered certain potions.  We know that Snape is very skilled with potions, because only he is able to make the potion for Lupin.  DD is able to find others who can teach DADA, even if they all haven't been as effective as one might want, but none can equal Snape for his expertise in potions.  DADA is more glamorous, but perhaps Potions is more essential.
I have always thought I would like Potions class, because I enjoyed chemistry and working with very precise amounts and  particular directions is something that I enjoy.
