I think JKR did try to include the holidays to
coincide with the Muggle world. I think the reason
Halloween is so prominant because it is usally
associated with witches and wizards, and would
naturally be a big holiday for them.
As for not going into details about organized
religions in the WW, there are a lot of things that
are not put in details in the books because they
aren't significant to the plot. How many books do you
know that go into detail about organized religion
unless part of the plot? Not very many.
