Voldemort wanted it because he DIDN'T know what it said. It was his
HOPE that by hearing the entire prophecy, he would find some clue that
would allow him to defeat Harry.
Remember, Voldemort still has not heard the prophecy, and he still
doesn't know whether it has helpful information or not. We, on the
other hand, have heard it, and most of us conclude that it was not
that useful. Although, the prophecy is subject to interpretation, and
may contain a clue that we, the reader, haven't realized yet.
The Prophecy is the foundation of everything that has happened between
Harry and Voldemort. Voldemort initially acted on the fragment of
information he did have about the prophecy, and that did not turn out
to well for him.
Since the Prophecy is the foundation, he would logically conclude that
if he had all the information (the entire Prophecy), he would be able
to plan a complete and effective strategy for dealing with Harry. Now
that it is gone, he will have to deal with not being able to find out
what it says.
Also, remember that Voldemort does not know that Harry knows what the
prophecy says. If you re-read the discussion between Harry and the
Death Eaters in the Hall of Prophecies, they are surprise to learn
that Harry doesn't know about the prophecy. So, that knowledge, or
Harry's lack of knowledge, now goes back to Voldemort. Voldemort may
assume that Dumbledore will eventually tell Harry the details, but he
can never be sure without confronting Harry and asking him directly.
So, we are enlightened, but Voldemort is still in the dark.
