I couldn't work out the best way to snip and comment to some of the
other replies, so I upthreaded all the way to here!

Well, there are quite a few who fit in the red haired family:
Weasleys, Dumbledore, Lily, any one else? (Does Crookshanks count?)
For dark or black we have McGonagall, Snape, Sirius, Harry. I've
wondered if hair color was just a discription or if it had any
connection to magic, something like noses, fingers and wands?

Red hair in all it's many hues is very common in the part of the U.S.
where I grew up. (South Eastern) But then, most of us are Scot-
Irish. And along that theme, the Irish are considered to have a
close connection to the magic world. (At least, that's what my family
claimed!)
