Carri here...
I think what we are seeing change is Harry's view of Molly.  When 
Harry first met Molly, he was hungry for a loving mother figure in 
his life, and he saw in her, what he had missed, but wished he had.
By the time we reach OoP, Harry is growing up, and is reaching that 
age in his teens where young adults strive for independance.  He 
feels like he can handle more responsibility, and now sees Molly 
as "coddling".  

Molly is acting like a loving mother whose beloved children and 
friends are in extreme danger.  And she realizes that life is much 
more dangerous than the carefree youths can imagine.  Harry just 
doesn't understand her perspective... as usual.
