I think he's really fed up with Neville's mistakes (kinda like
Hermione when the boys don't work). Since the beginning, he
insists about the exactness, the discipline in potion making.
When someone chose the wrong ingredient, at a wrong moment, or
only missing something, it could provoke an explosion or create
a poison.
Maybe he thought, "What can I do to push him, to show his mistakes
could kill someone, at worst? Hey, a toad, why is it here? It's
Longbottom's!...héhéhé..."
He always knew when the dream team talked in class, how could he
miss Hermione helping Neville ?
I think he knew all along that she helped him, he "only" wanted to
frighten Neville, to show him the risks.
And while I'm here, why Trevor was there? And how Snape knew it's
Neville's?

I think that you've hit the nail on the head. I believe that we are seeing a frustrated Potions Master that is trying to get it through Neville's head that the class is serious and how one seemingly small mistake can cause certain diaster....think about this, potions is the equivalent to muggle chemistry, where a small mistake can lead to very disastrous consequences...so can potions.
However, like you, I would like to know why Trevor was there. That to me is a bigger question than how did Snape know who's toad it was, because I assumed that he had seen Trevor in Neville's bag or pocket...but why did he take the toad to class?
